On the third day of UNESCO Summer University - Sustainable Agriculture, Local Products and Business at Central Balkan Biosphere reserve

With a bit of a misty morning, the third day surprised the participants with slight rain and amazing breakfast prepared by Lift Sopot. After having some homemade mozzarella from the farm, everyone joined the tour around the Lift and the nearby pool and was given the chance to learn more about Gelato and Latte, Lift Sopot and Rozino Organic Farm and their business model. The buffalo and cow milk produced in the farm is being transported to Lift Sopot and Gelato and Latte in Sofia and is being used to make fresh gelato every day.

The architect of the project talked about the importance of diversification of the services provided and how they have decided to invest in the swimming pool, located right next to the lift. The team also shared their philosophy about sustainable development and setting an example to the local communities by using only compostable packaging and preserving the local environment.

After tasting some freshly-made gelato, Stefan told the participants exciting stories about flying from a local pilot. Recently, the lift has become extremely popular for paragliders (since 2005). The stories about flying and the beautiful view were so exciting that some of our participants expressed their desire to understand by themselves what is to fly. And so we had to change the programme and take advantage of the good weather forecast on the next day and take their first paragliding experience.

After tasting the gelato, it was time to visit the farm – Rozino Organic Farm. Tsenko Tsenkov who is taking care of the animals in the farm explained the story of the farm and talked a little bit more about the different breeds and the Jersey cows and Bulgarian Mura Buffaloes. Everyone was excited about the animals in the farm and wanted to take pictures with the baby cows and the blue eyes of the buffaloes. The participants were also curious about the plans of the farm and talked a lot about the interesting local products which they are producing. After the visit, it was time to taste some of those products, such as yoghurt, milk, mozzarella, Bulgarian Cheese, etc. While enjoying the homemade food prepared by Lift Sopot, the participants were enjoying the view and the sounds of the river and it was soon time for group work. The time was used for group work and sharing of recommendations and suggestions related to Central Balkan BR.

In the afternoon we visited one of the largest rose oil factories in the region Bulgarian Rose Distillery. The participants were given a guided tour with a presentation of the process of rose oil products.

The day, full of adventures and devoted to Sustainable Agriculture, Local Products and Business in Central Balkan Biosphere Reserve ended with a special dinner and wine tasting at Chateau Copsa. The owners of Chateau Copsa own 50 hectares of vineyards, with a big varieties of grapes, from which they make a very delicious wines, as we all agreed :)
